Black Bean and Asparagus Stir Fry

Ingredients

lb(s) striploin or top sirloin steaks, fat trimmed
¼
cup cornstarch
½
cup soy sauce

Tbsp minced fresh ginger

cloves garlic, minced
½
cup canola oil

cup canned black beans, drained

cup chicken broth
½
tsp red pepper flakes
½
tsp salt
½
granulated sugar

lb(s) fresh asparagus, cut into 2-inch pieces

red or orange bell peppers, sliced

Directions

Step 1

Thinly slice steaks and place in large bowl; toss with cornstarch. Add soy sauce, ginger, garlic, and half of the oil; set aside to marinate.

Step 2

In a food processor, puree beans with broth, red pepper flakes, salt, and sugar; set aside.

Step 3

Heat remaining oil and sauté asparagus and red pepper; remove into bowl. Sauté beef in batches and add to bowl. Bring bean mixture to boil in wok and return beef and vegetables to wok; stir and heat through to serve.
