Black Bean Sausage Soup

Directions for: Black Bean Sausage Soup


2 smoked sausage, (4 ounces), diced

1 onion, finely, chopped

2 tsp ground cumin

2 Tbsp tomato paste

1 19 oz can black beans, drained, and, rinsed


1. In a large saucepan, brown sausages over medium heat, about 5 minutes. Add onion and cumin; cook, stirring occasionally, until softened, about 2 minutes.

2. Add tomato paste; cook, stirring, for 1 minute. Add beans and 4 cups (1 L) water; bring to boil. Reduce heat, cover and simmer for 15 minutes.
