Black Diamond Extra-Old Cheddar Crêpes

Add apples and ham to these Black Diamond Extra-Old Cheddar Crêpes and top with cheese sauce for a fabulous brunch.

ingredients

Batter

small bottle of beer

cup (375 mL) all-purpose flour
½
cup (125 mL) Black Diamond Mild White Cheddar Cheese, shredded

eggs

Tbsp (15 mL) honey

Filling

Granny Smith apple, minced
1 ½
cup (375 mL) Black Diamond Extra-Old Cheddar Cheese, diced

slices Black Forest ham

Tbsp (90 mL) butter

Tbsp (90 mL) flour

green onions, minced

cup (750 mL) milk
1
pinch nutmeg
salt and pepper to taste

Step 1

In food processor, combine all batter ingredients. Blend on high for about 1 minute. Set aside in a bowl.

Step 2

In a saucepan, melt butter over medium heat and sprinkle flour while stirring until smooth. Gradually add 1 cup milk in a drizzle, stirring continually. Add green onions and cook 1 more minute while stirring. Let thicken.

Step 3

Gradually add remaining milk in a drizzle, add Black Diamond mild cheddar, nutmeg, salt and pepper. Stir until smooth and creamy. Set aside.

Step 4

In a non-stick skillet, melt a little butter over medium heat, then pour a ladle of batter. Cook 3 to 4 minutes on each side. Set cooked crêpe aside and keep warm. Usually, adding butter is not necessary to cook other crêpes. Repeat procedure until there is no more batter.

Step 5

Fill crêpes with apples and ham topped with Black Diamond extra-old cheddar cheese sauce. Roll crêpes and top with cheese sauce.
