B.L.T. Salad with Avocado Ranch Dressing

Add some flare to your BLT by serving it alongside an avocado ranch dressing. Yum!

ingredients

lb(s) sliced bacon, cooked until crisp

heads iceberg lettuce
4
ripe Heirloom tomatoes, cut into ½-inch slices

Tbsp snipped fresh chives

large avocado, peeled
1
cup mayonnaise
½
cup sour cream
cup chopped scallions

Tbsp lemon juice
Salt and freshly ground black pepper

Step 1

In a food processor combine the avocado, mayonnaise, sour cream and lemon juice and mix together until smooth. Add the chopped scallions and season well with salt and pepper.

Step 2

To compose the salad, cut the iceberg lettuce into 1 inch discs. (You should get 2 portions per head of lettuce.) Place the first slice of lettuce on a plate. Spoon 1 tablespoon of the avocado ranch dressing on top of the lettuce. Then arrange the tomato slices on top and season with salt and pepper.

Step 3

Place 2 pieces of crisp bacon on top of tomatoes. Finally, top with another slice of iceberg lettuce. Drizzle more Avocado Ranch dressing on top of salad and sprinkle with chives.
