Ingredients

lb(s) fresh cultured blue mussels

Tbsp olive oil
1
Tbsp dry white wine
1
Tbsp lemon juice
2
spring onions, finely chopped
3
Tbsp parsley, chopped
1
pinch black pepper, freshly ground

Directions

Step 1

Rinse the fresh blue mussels in tap water. Place in a large saucepan with a small amount of water on high heat. Cover and let steam until shells open (5 – 7 minutes)

Step 2

When the mussels have cooled, remove the mussel meat from shells.

Step 3

Add fresh blue mussel meat to remaining ingredients and toss thoroughly.

Step 4

Allow to marinate in refrigerator 1/2 hour before serving.
