Ingredients
Basil Verde

gram basil

gram capers

cloves garlic

millilitre red wine vinegar
salt, to taste

millilitre extra virgin olive oil
Bocconcini & Assembly

millilitre cherry bocconcini, drained

pinches salt, to marinate the bocconcini
1
cup (225 mL) flour

eggs
Panko breadcrumbs
Fresh basil leaves, fried

Directions
Step 1
Combine all ingredients together and blend until smooth.
Step 2
In separate bowls add flour, panko and egg mixture.
Step 3
Bread the bocconcini in the flour bowl first, then into the egg mixture, then finally into the breadcrumb bowl. Continue until all the bocconcini are coated.
Step 4
At medium heat, heat up oil and fry bocconcini for no more than 2 minutes or until ready. Alternatively, bake in the oven for 15 minutes at 350ºF degrees.
Step 5
Garnish 5 bocconcini fritti with basil verde and one large fried basil leaf.
