The brown rice gives a good nutty flavour to this salad while the orange and orange zest gives it that fresh zing!

Ingredients

cup assorted brown rice (500 ml)

Tbsp toasted peanut oil (30 ml)

Tbsp apple cider vinegar (45 ml)
½
small chili, finely chopped
3
green onions chopped
grated zest and juice of 1 orange
⅓
cup chopped dried apricots (75 ml)
1
red pepper, sliced into strips
coarse salt and freshly ground pepper, to taste
chopped fresh cilantro, to taste

Directions
Step 1
Cook rice in boiling, salted water according to package directions. Strain and cool.
Step 2
In a medium bowl combine remaining ingredients with rice and toss until well blended. Season with salt and pepper and sprinkle with some chopped fresh cilantro.
