Try this Portuguese green soup made of collard greens, potatoes, chorizo and parsley.

potato, baking, peeled, cubed, (about 1 pound)

onion, chopped

cup water
1
cup parsley, fresh, chopped
1 ½
tsp salt
8
oz greens, collard
1
sausage, chorizo, thinly, sliced, (7 ounces)
1 ½
tsp pepper

Tbsp oil, olive, extra virgin

Step 1
In large saucepan, bring potatoes, onion, water, parsley and salt to boil.
Step 2
Reduce heat, cover and simmer until potatoes are tender, about 20 minutes.
Step 3
In blender or food processor or using immersion blender, purée soup, in batches, and return to pan.
Step 4
Meanwhile, trim off stems and ribs from collard greens.
Step 5
Shred leaves finely.
Step 6
Add shredded leaves, sausage and pepper to puréed soup.
Step 7
Cook until greens are tender, about 20 minutes.
Step 8
Gently stir in oil.
