cups Basic Pantry Pancake and Waffle Mix (See Cook's Note below)

cup milk
½
cup buttermilk
2
eggs, beaten
2
Tbsp oil
½
tsp onion powder
½
tsp garlic powder

- 4 slices fresh mozzarella
2
- 3 slices tomato
3
large fresh basil leaves, chiffonade
olive oil
salt

Step 1
Place waffle mix, onion powder and garlic powder in a large bowl. Add buttermilk, eggs and oil and mix until just combined. Let rest for 10 minutes.
Step 2
Coat waffle iron with oil or non-stick spray. Follow the waffle iron’s instructions for cooking and greasing the iron in between batches.
Step 3
Pack slices of mozzarella and basil in separate airtight storage containers. Place tomatoes slices in an airtight storage container and then drizzle with olive oil and a pinch of salt. Pack all containers for assembly at noontime.
