cup (375 ml) all-purpose flour

tsp (5 ml) ground cinnamon

tsp (2 ml) baking soda

tsp (1 ml) salt

cup (125 ml) soft (tub) margarine

cup (175 ml) firmly packed brown sugar

egg

Tbsp (25 ml) apple juice or water

tsp (5 ml) vanilla extract

cup (375 ml) grated carrots
1 ¼
cup (300 ml) All-Bran Buds* cereal

cup (250 ml) raisins

Step 1

Stir together flour, cinnamon, soda and salt; set aside.

Step 2

In large mixing bowl, cream together margarine and sugar until fluffy; beat in egg, juice and vanilla; mix in carrots. Stir in flour mixture, then cereal and raisins, until well combined.

Step 3

Drop by rounded 15 ml measure (tablespoonful) about 5 cm (2″) apart onto ungreased baking sheets.

Step 4

Bake at 190°C (375°F) for 8-10 minutes, until light golden.
