Tzimmes is a traditional Ashkenazi Jewish sweet stew incorporating carrot, pineapple, honey and cinnamon.

Ingredients
Carrots, peeled and sliced into ¼-inch rounds (2 lbs)
Water, enough to cover
½
cup honey
1
Tbsp lemon juice
1
tsp cinnamon
Salt, to taste

- 3 Tbsp butter
1 ½
cups pineapple, diced

Directions
Step 1
Add the carrots, water, honey, lemon juice, 1 cup of diced pineapple, cinnamon and salt to a large saucepan and stir together.
Step 2
Set the saucepan over medium-high flame and bring to a boil. Reduce heat to medium-low, cover and simmer, stirring occasionally, until the carrots are cooked through, about 15 to 20 minutes.
Step 3
Remove cover and increase heat to medium-high. Boil to cook down the liquid until it forms a glaze on the carrots. Stir in the butter, adjust seasoning and serve.
Step 4
Garnish with ½ cup diced pineapple.
