x 19-ounce can sour cherries with their juice
Juice of ½ lemon

cup sugar (60 ml)
½
vanilla bean, scraped
⅓
cup brandy or kirsch (75 ml)
Vanilla ice cream, for serving

Step 1
Drain the cherries adding the juice to a small saucepan and reserving the cherries. Add the lemon juice, sugar and vanilla bean scrapings to the pan. Heat to a simmer on medium heat and reduce by half or for about 10 minutes, stirring occasionally. Add the reserved cherries back to the pan and allow it to get very hot.
Step 2
Pour the brandy into a stainless steel ladle and ignite it with a match. Pour the flaming brandy onto the cherry mixture and let burn for a few seconds as the alcohol burns off. If the flame doesn’t extinguish, cover the pan with lid. Spoon the cherries jubilee over ice cream and serve.
