Tbsp olive oil (30 ml)

small cooking onion, finely chopped

clove garlic, finely chopped
1
tsp allspice (5 ml)
½
tsp chopped fresh thyme (2 ml)

cup basmati rice (375 ml)
2 ½
cup chicken stock or water (750 ml)

bay leaves
Salt and pepper

Step 1
In a medium pot, heat olive oil over high heat. Add onion and sauté for several minutes, until it is very soft and beginning to caramelize. Add garlic and sauté for another 3 to 4 minutes. Add allspice, thyme and rice and stir, coating the rice well with oil. Add stock, bay leaves, salt and pepper and bring to a boil. Reduce heat to low, add beans and cover and simmer for 15 minutes. Do not remove lid. Remove from heat, and let stand for at least 5 minutes. Just before serving fluff rice and adjust seasoning.
