Charring the tomatoes adds a good depth of flavour. This is also a great way to sweeten tomatoes a little if they aren’t at their peak ripeness. You can char the tomatoes on a grill or in a hot cast iron skillet.

plum tomatoes, whole

Tbsp olive oil, for charring the tomatoes (15 ml)
½
red bell pepper, finely diced
½
small Spanish onion, finely diced
1
ribs celery, finely diced
1
clove garlic, minced
2
Tbsp chopped fresh parsley (30 ml)
Squeeze of fresh lemon juice

Tbsp olive oil, for the salsa (15 ml)
1
tsp dried Greek oregano (5 ml)
pinch of cayenne, or to taste
Coarse salt and freshly cracked black pepper

Step 1
Preheat grill to high.
Step 2
Brush the tomatoes with 1 tbsp. olive oil. Grill tomatoes, turning as they brown, about 6 to 8 minutes.
Step 3
Peel and chop the tomatoes and add to a medium bowl. Add the red pepper, onion, celery, garlic, parsley, lemon juice, 1 tbsp. olive oil, oregano, cayenne. Season the mixture with salt and pepper. Toss. Taste for seasoning.
