A make-ahead breakfast that makes having overnight guests easy.

loaf Texas toast

slices bacon, cooked and diced

cup shredded lactose free Swiss cheese
1
large sweet red pepper, chopped
4
green onions, chopped
8
eggs
2
cup Natrel Lactose Free Milk
¼
cup chopped fresh basil
1
Tbsp Dijon mustard
Salt and pepper to taste

Step 1
Remove crusts and cut bread in 1” (2.5 cm) cubes. Put in single layer in greased 12”x7” (3 L) baking dish
Step 2
Sprinkle bacon, cheese, pepper and onions on top.
Step 3
Beat remaining ingredients together. Pour into casserole. Press down lightly to moisten all ingredients.
Step 4
Cover with plastic wrap. Refrigerate overnight.
Step 5
Bake, uncovered at 350oF (180oC) for 40 to 50 minutes, or until puffed and golden.
Step 6
Tip:
· For a vegetarian dish, replace bacon with 1 cup (250 mL) chopped cooked asparagus or broccoli.
