cup all purpose flour
½
tsp baking soda
½
tsp aniseed, crushed
¼
cup dried cherries
¼
cup shelled pistachio nuts

egg
cup granulated sugar

egg, white, beaten

Step 1

Preheat oven to 350 degrees F (180 degrees C).

Step 2

In a large bowl, stir together flour, baking soda and aniseed; stir in cherries and pistachio nuts.

Step 3

In separate bowl, whisk together eggs, sugar and vanilla; stir into flour mixture to make soft sticky dough.

Step 4

Turn out onto lightly floured surface; divide in half and place on greased baking sheet.

Step 5

Shape into two 9- x 3-inch (23 x 8 cm) rectangles.

Step 6

Brush dough with egg white; sprinkle with sugar.

Step 7

Bake in 350 degree F oven for 15 to 18 minutes or until light golden on top and golden brown on sides.

Step 8

Let cool on pan on rack for 10 minutes.

Step 9

Transfer to cutting board.

Step 10

With serrated knife, cut diagonally into 1/2-inch (1 cm) thick slices.

Step 11

Stand slices up, about 1/2 inch (1 cm) apart, on baking sheet.

Step 12

Bake in 275 degree F (140 degree C) oven for 35 to 40 minutes or until golden and completely dry.
