Chicken salad gets an extra dose of creaminess from luscious avocado.
cups cooked chicken, cubed (about 1 large chicken breast)
cup Greek yogurt
Tbsp fresh lime juice
tsp fresh cilantro, chopped
pinch salt and pepper
Butter lettuce leaves
Slice open your avocado, carefully remove the pit and then use a small, sharp knife to score the flesh. Now use a small spoon to scoop out those avocado cubes.
In a large bowl, mix the chicken, avocado cubes, mayonnaise, yogurt, lime juice, cilantro and salt and pepper. Be gentle so the avocado keeps some of its shape. Taste for seasoning.
Take a serving of chicken salad in a container, bring lettuce separately and assemble at lunch. A scoop of chicken salad goes in the middle of the leaf. Gently fold over and enjoy.
