With the rack in the middle position, preheat the oven’s broiler.
On a baking sheet, toss cauliflower, onion and garlic with melted butter. Lightly oil chicken and sprinkle with thyme. Spread on the baking sheet. Season with salt and pepper.
Roast for about 30 minutes, stirring halfway through cooking. Add broccoli and toss to coat with butter. Roast for about 10 minutes. Remove from the oven. Sprinkle with cheese and serve immediately.
