boneless, skinless chicken thighs, cubed

onion, chopped

clove garlic, minced

Tbsp (30 mL) Cajun seasoning
½
cup (125 mL) white wine

cup (300 mL) UNCLE BEN'S® WHolegrain Brown Rice
2
cup (500 mL) sodium-reduced chicken broth
1
can (398 mL) diced tomatoes
½
tsp (2 mL) each salt and pepper (approx.)
1
green pepper, chopped
hot sauce
lemon wedges

Step 1
Heat the oil in large, nonstick skillet set over medium heat. Add the chicken, onion, garlic and Cajun seasoning. Cook for 10 minutes or until browned.
Step 2
Add the wine; simmer for 1 minute. Stir in the UNCLE BEN’S® Wholegrain Brown Rice until well coated. Add the broth, tomatoes, salt and pepper; bring to a boil. Stir in the green pepper.
Step 3
Cook, covered, for 15 minutes or until rice is tender and fluid is absorbed. Adjust salt and pepper to taste. Serve with hot sauce and lemon wedges.
Step 4
Tip: Add cooked shrimp or sliced smoked sausage with the green pepper.
