In a shallow dish or bowl, mix together the flour, salt, pepper and oregano.
Coat chicken pieces in flour mixture. Dust off excess flour.
In a large skillet, heat oil over medium heat.
Cook chicken until golden brown on each side.
Add the mushrooms and jalapeno pepper.
Pour in wine and sherry. Cover the skillet and simmer for chicken 10 minutes, or until the juices in the chicken run clear. Turn chicken once halfway through.
Serve with ricotta gnocchi and caesar salad.
Mix ricotta, egg, and rosemary, salt and pepper together. Mix in enough flour to form dough.
Bring a pot of salted water to a boil.
Roll out dough into 2 inch (5 cm) logs and cut into small pieces.
Drop into salted water and cook until gnocchi float to the top. Drain and set aside.
In a skillet, sauté peppers, onion, soybeans and cherry tomatoes.
Deglaze with wine.
Toss gnocchi with sautéed vegetables.
Prepare dressing by mixing together mayonnaise, milk, and minced garlic. Toss together lettuce and dressing. Add Parmesan cheese, bacon bits and fried onions to taste.
