Dust chicken breast lightly with flour.
In a medium size mixing bowl whisk together eggs, Dijon, salt and pepper.
In a separate large mixing bowl stir together bread crumbs, paprika, garlic powder, salt and pepper.

Dip floured chicken breast into the egg mixture followed by the bread crumb mixture, shaking off any excess breading. Transfer to a sheet pan and refrigerate until ready to fry. This step can be done up to 24 hours in advance.

Add avocado oil to a skillet over medium heat. Once the oil is heated, pan fry the chicken on each side until golden and cooked throughout, about 2 to 4 minutes on each side.
