Heat oil in large stove-top pot at medium.
Cut chicken into bite size pieces and add to pot.
Season with spice and stir until meat is no longer pink.
Add onion and celery to pan.
Drain mushroom and add to pot.
Add cream of celery soup and stir.
Gradually add chicken broth and stir.
Add milk to reserved mushroom liquid to make a total of 2 cups liquid.
Add to pot and stir.
Add tortellini to pot. Reduce heat to simmer. Set timer for 15 minutes or until tortellini is soft. Stir often.
Cut veggies into chunks and place in serving bowl.
Cut red onion into slices and add to bowl.
Add olive oil, lemon juice and seasoning to bowl and toss until veggies are well coated.
