Try this unique soup featuring Bing cherries, the ideal meal to cool down with on a hot day. Courtesy of The Burnt Tongue.
lb(s) fresh Bing cherries, stemmed and pitted
cup cherry juice
tsp almond extract
oz sour cream
Add cherries with their juice to pot. Add salt, cinnamon stick, almond extract and sugar. Bring to a boil, turn down and simmer until cherries are soft about ten minutes.
Take off the heat. In a small bowl whisk sour cream and some hot cherry juice together.
Incorporate sour cream mixture into soup and chill.
