The Chimney is traditionally called a Kurtoskalacs, which is an old Transylvanian word which roughly means “stovepipe.”

cups all-purpose flour

Step 1

Using a mixer with a dough hook, add the dry ingredients to the bowl.

Step 2

Add in the butter or margarine and water.

Step 3

Mix for 10 to 12 minutes.

Step 4

Once dough is mixed, take off the mixer and cover bowl for 20 to 30 minutes to rise.

Step 5

While dough is rising, make the spindle to bake the Chimney Stax by taking the cut paper towel rolls and covering them entirely in aluminum foil.

Step 6

Once dough has risen, potion dough into 120g balls using a scale.

Step 7

Let the dough balls rest for another 10 minutes.

Step 8

Move your oven racks to the lower part of your oven.

Step 9

Preheat oven to 450°F.

Step 10

Roll out dough into ‘snakes’ about 18 to 24 inches long.

Step 11

Brush oil on your spindle and roll 1 snake of dough onto it.

Step 12

Roll the spindle in sugar then carefully place it standing up on a baking sheet.

Step 13

Bake the tray of spindles for 12 minutes until sugar begins to caramelize.

Step 14

While still hot, carefully roll Chimney Stax into the toppings of your choice.

Let stax cool before enjoying!
