Slice bananas into half. Place on a parchment lined baking tray and stick each banana with a popsicle stick. Freeze for at least 4 hours, or overnight.
To assemble: prepare about 1/4 cup of each preferred topping and place in a small bowl. Melt both white and milk chocolate in a double boiler and pour into a jar. Dip each piece of frozen banana into the chocolate, then sprinkle with preferred toppings and your choice of Graham Goldfish Crackers. Repeat with all banana chunks. Place back into the freezer until ready to serve.
