Chocolate-Dipped Honeycomb Candy

Honeycomb goes by a variety of names—hokey pokey, sea foam, sponge toffee and fairy food—to name a few. No matter what the name, honeycomb tastes unmistakably crunchy, sweet caramel and light as air.

cup sugar
¼
cup water
cup golden syrup
2
tsp baking soda
1 ½
cups dark chocolate, chopped (or chocolate chips), for dipping

Step 1

Line a 9 x 13” baking dish with overhanging parchment paper.

Step 2

In a large pot combine the sugar, water and golden syrup. Bring to a boil, without stirring. Boil until the mixture turns a caramel colour, about 3 minutes.

Step 3

Quickly whisk in the baking soda. The mixture will foam and bubble up. Working fast, pour the mixture into your prepared baking dish. Let cool.

Step 4

Once the honeycomb has cooled, break into large pieces for dipping in chocolate. Melt the chocolate in the microwave, stirring every 30 seconds.

Step 5

Dip the honeycomb in the melted chocolate and place on a parchment-lined baking sheet to cool and set.

Step 6

Notes: Make sure to use a very large pot as the honeycomb will bubble and boil up once you add the baking soda. Also, work quickly because honeycomb starts to set fast!
