Preserved lemons make a great, mildly tart but very citrus condiment.

ingredients

lemon
cup salt

cinnamon, stick

allspice berries

coriander, seeds

bay leaf

Tbsp sugar

cup fresh lemon juice

Step 1

Cut two cross slices down each lemon stopping about ½ inch from the bottom.

Step 2

Sprinkle a pinch of salt inside the lemon.

Step 3

In a mason jar big enough to hold the lemons place 1 tbsp salt and then squash the lemons into the bottom of the mason jar with the spices and remaining salt, pour over enough of the lemon juice to cover the lemons then put a lid on the jar.

Step 4

Put jar in a warm room for 30 days.

Step 5

It does not need to be refrigerated.

Step 6

Use as needed. Rinse lemons before using.
