Classic Caesar Dressing

This is a piquant, Caesar dressing that is made without eggs or dairy. It can be made in minutes, and then tossed into a large bowl of romaine lettuce and croutons. This recipe yields enough for two or more large Caesar salads, enough to serve 2-4 people each. Recipe by Dreena Burton.

cup (packed) SILKEN firm tofu

Tbsp Vegenaise or Nayonaise

Tbsp olive oil

Tbsp freshly squeezed lemon juice

Tbsp apple cider vinegar
1
Tbsp mild miso (ex: Genmai brown rice miso)

medium clove garlic, halved

tsp Dijon mustard
1
tsp capers

tsp vegan Worcestershire sauce
¼
tsp sea salt
Freshly ground black pepper to taste
¼
tsp agave nectar

Tbsp nutritional yeast

Step 1

With a hand blender or in a blender or a food processor, combine all ingredients (starting with 2 tbsp oil) and purée until very smooth, scraping down sides of bowl as needed.

Step 2

Add additional oil and agave nectar to taste.

Step 3

Note; If you love nutritional yeast, go ahead and add it into this dressing. It will give just a slight cheesy flavor that is enjoyable, though it is certainly not essential to make this dressing delicious.

Step 4

Note: This dressing is fairly dense, and will thicken after refrigeration. Thin as desired before serving by stirring in 3-4 tsp plain soy milk.
