Tip: Marshmallows can be broiled in oven on a foil-lined baking sheet for 1 to 2 minutes.
Step 1
Arrange 8 butter cookies on a plate, chocolate side up.
Step 2
Spread each cookie with a heaping teaspoon of peanut butter.
Step 3
Toast marshmallows over a grill or campfire until golden brown, 2 to 3 minutes.
Step 4
Immediately place a marshmallow on each peanut butter spread cookie. Sandwich with remaining 8 cookies.
