Clay Pot Baked Orzo with Sweet Potato and Rapini

Tbsp extra virgin olive oil

cloves garlic, minced
1
small onion, finely diced
1
leek, white part only, finely chopped
2 ½
cup chicken stock
1
cup orzo
1
small sweet potato, peeled, diced
2
plum tomato, diced
1
tsp dried oregano sprigs
2
fresh thyme sprigs
salt
freshly cracked black pepper

bunch rapini, blanched

Step 1

In a small pan heat olive oil on high. Sauté the onion and leek 3 to 4 minutes until soft. Add the garlic and chicken stock and remove from heat.

Soak clay pot according to manufacturer’s directions. Pour stock mixture and all remaining ingredients, except rapini, into clay pot. Put into a cold oven. Turn oven on to 375° F. Bake for 35 minutes. Remove from oven and adjust seasoning. Sprinkle with blanched rapini.
