A delicious, healthy alternative to store bought granola!

It’s healthier than store bought granola and tastes fantastic! Plus, it makes my kitchen smell amazing!

You can swap out the nuts and dried cranberries with any other kind of nuts, seeds or dried fruit you like. I've even added a bit of dark chocolate to this when I feel like a treat!
Preheat oven to 325ºF.
In a large mixing bowl, stir together oats, almonds, cashews, coconut, salt, cinnamon and nutmeg.
In a saucepan, melt coconut oil, honey, sugar and vanilla over medium heat. Pour this mixture over the oat mixture and stir until combined.
Line baking sheet with parchment paper. Spread granola mixture over baking sheet and bake for 15 minutes. Stir, then continue to bake for 10 minutes until granola is a light golden brown.
Stir in cranberries after removing from oven.
Serve with milk, yogurt or anything else you like to eat with granola!
