cauliflower florets
Orange pepper strips

cup smoked gouda, shredded

cup sharp cheddar, shredded

Step 1

In a medium pot heat olive oil. Once hot add red onion and saute until onion begins to turn translucent. Lower heat and add flour and garlic powder, whisking constantly to avoid anything sticking to the bottom. Once the flour mixture has begun to darken in colour; slowly add the evaporated milk one splash at a time, while whisking constantly. Add cream cheese and bring to a gentle simmer, stirring occasionally. Once mild mixture is hot, but not bubbling, add shredded cheese and stir until completely melted. Add in mustard, salsa and season to taste. If preparing ahead of time, heat on low until sauce loosens.

Step 2

Place cauliflower florets on plate. Using the red Goldfish crackers, create an arch of colour from one floret to the next. Repeat with the orange cracker, using a few less than below. Repeat with the green cracker, using a few less before. Lastly, finish with the yellow crackers.

Step 3

Place cheese sauce in a small bowl. Line strips of orange pepper around the bowl to finish off your sun.

Step 4

Dip cracker and veggies in queso and enjoy!
