Confit of Garlic

cloves of garlic, peeled

cup olive oil

Step 1

Cook the garlic cloves with the olive oil in a small saucepan over medium low heat.

Step 2

When the olive oil begins to simmer turn the heat down to low. Cook for 45 minutes or until the garlic is soft but not coloured.

Step 3

Pour into an airtight container and store in the refrigerator to use with Roast Shoulder of Lamb with A Million Cloves of Garlic.
