Makes almost 48 cookies. Add ins: skor bits, nuts, candied ginger minced (roll in flour before adding).
Step 1
Preheat oven to 350ºF.
Step 2
Cream together eggs and cookie butter.
Step 3
Add flour until just mixed.
Step 4
Scoop by tablespoon (an ice cream scoop makes this soooo easy) onto a lined cookie sheet.
Step 5
Bake in oven centre until edges are set but tops of cookies are still shiny.
Step 6
Remove from tray to cooling rack – ice with cookie butter while warm.
Step 7
WARNING these are potentially diet busters!!!!!
