Tuck into this new Canadian staple! A mixture of vegetables, peas, diced ham and rice served with cottage cheese.

Tbsp (15 mL) butter

onion, chopped
3
stalks celery, finely diced

carrots, finely diced
1
cup (250 mL) fennel bulb, finely diced

cup (500 mL) ham, diced
4
cup (1 L) low-sodium chicken broth OR low-sodium vegetable broth
4
cup (1 L) water

oz (796 mL) diced tomatoes

cup (125 mL) long-grain rice

cup (375 mL) Canadian cottage cheese
1
cup (250 mL) frozen peas
1
cup (250 mL) corn kernels
freshly ground pepper, to taste
chopped fennel leaves, to taste

Step 1
In a large saucepan, melt butter, then brown vegetables for 5 minutes.
Step 2
Add ham cubes and cook 2 more minutes.
Step 3
Pour broth, water, and diced tomatoes with their juice into saucepan.
Step 4
Bring to a boil and add rice.
Step 5
Cover and let simmer on low heat for 40 minutes.
Step 6
Meanwhile, remove cottage cheese from refrigerator to bring it to room temperature.
Step 7
Add peas and corn, and cook for 5 minutes or until heated through.
Step 8
Garnish with cottage cheese and fennel leaves, and serve.
