This zucchini pizza makes a simple savoury brunch dish.

Heat half the olive oil in a large skillet, over high heat.
Fry the zucchini for 2 minutes per side or until lightly browned.
Season with salt and pepper.
Cook zucchini in batches to keep pan temperature high.
As slices cook, transfer to a side plate and repeat with remaining zucchini.
In medium saucepan, heat the remaining olive oil.
If all oil was used to fry zucchini add additional 2 tbsp. to continue sauce.
Add the shallots and sauté forapproximately 3 minutes to soften slightly.
Add the garlic and sauté for about 1 minute until garlic softens.
Add the herbs and tomatoes and reduce to medium heat.
Simmer covered 15 to 20 minutes until tomatoes soften.
Adjust the seasoning and just before serving, reheat the zucchini slices in the sauce.
Simmer covered for 3 to 5 minutes, until zucchini have absorbed the sauce and are still holding their shape.
