Crab & Avocado Salad

You can’t go wrong with a crab salad. You can substitute tomatoes for the avocados in this recipe. Recipe from The Real Jerk, courtesy of Arsenal Pulp Press.

Ingredients

ripe avocados

cup mayonnaise
½
cup sour cream
¼
cup celery, finely chopped
¼
cup escallion, finely chopped
¼
cup fresh cilantro, finely chopped
¼
cup cayenne pepper
salt and pepper to taste

lb(s) cooked crab meat
¼
tsp jerk sauce
cilantro (garnish)

Directions

Step 1

Peel, halve, and remove pits from avocados.

Step 2

In a medium bowl, combine first seven ingredients.

Step 3

Fold in crab meat and jerk sauce, mixing as little as possible so as not to break up the meat. Fill avocado halves with mixture. Garnish with cilantro.
