This is an elegant grilled sandwich great for any occasion. From Where People Feast: An Indigenous People’s Cookbook, published by Arsenal Pulp Press.
In a bowl, stir together all ingredients except butter, bread, and Cheddar cheese, then set aside.
Butter one side of 4 bread slices. In a frying pan on medium heat, place 4 slices buttered-side down. Spread crab mixture evenly over slices in frying pan then add a layer of Cheddar cheese. Place remaining 4 bread slices on top of mixture, then butter them.
Cover pan with lid and grill sandwiches for 2 minutes on each side.
