Crispy Noodle Crunch

pkg (85 g) ramen noodle soup with seasoning packet

tsp canola oil
¾
cup sliced almonds
¼
cup sesame seeds
1
clove garlic, minced (optional)
Salad
½
cup sugar
½
cup extra virgin olive oil
¼
cup apple cider vinegar
2
Tbsp soy sauce
3
romaine hearts, chopped
2
cans mandarins, drained
2
cups snow peas, halved on the diagonal
1
pt grape tomatoes
1
orange or red pepper, thinly sliced
½
cup dried cranberries

Step 1
Crush the soup package to break up the noodles. In a skillet heat oil and sauté noodles, almonds, sesame seeds, seasoning packet and garlic if using until golden brown; set aside.
Step 2
In a small saucepan bring sugar, oil, vinegar, and soy sauce to a boil. Remove from heat and let cool.
Step 3
Spread lettuce over large platter and top with mandarins, snow peas, tomatoes, pepper, and cranberries.
Step 4
Drizzle enough of the dressing over salad to coat and sprinkle with the crispy noodle crunch. Toss well before serving.
