slices smoked salmon, torn into pieces

Step 1
Mix eggs, chives, red pepper, salt, and milk together in a medium bowl.
Step 2
Heat a large dry frying pan on medium-low heat.
Step 3
Cut croissants in half, spread with 2 tbsp. butter, and toast until golden brown, about 1 to 2 minutes per side.
Step 4
Set aside on serving plates.
Step 5
Increase the heat under the frying pan to medium-high and add remaining 1 tbsp. butter.
Step 6
Add the eggs and scramble, stirring constantly, for about 1 to 2 minutes.
Step 7
Stir in the smoked salmon and heat for a few seconds.
Step 8
Fill toasted croissants with scrambled egg mixture and serve.
