Preheat oven to 325ºF.
In a small saucepan, combine butter, brown sugar, honey, maple syrup, vanilla and salt. Cook on medium heat and stir until sugar dissolves.
In a separate bowl, combine oats, almonds, pecans, pumpkin seeds (if no pumpkin seeds, substitute for more almonds, etc), dried cranberries, and cinnamon.
Drizzle liquid mixture over oats and stir to coat.
Line a baking sheet with parchment paper.
Pour mixture on to the baking sheet.
Bake for 40 minutes, stirring the granola halfway through.
Set aside and let cool completely.
Break apart granola using a fork and add ½ cup chopped dark chocolate to the granola.
Serve alongside Greek yogurt and your favourite preserves! Store remaining granola in an airtight container.
