Cooked down with some red onion and diced apple, this chutney is really easy to make and is a welcomed addition to a bowl of rice and vegetables, served on the side with a roast chicken or even with a soft cheese like Brie or Camembert.
Recipe by Dan Clapson using a mystery ingredient – dates – from a Chopped Canada challenge. See the full post here.

Place all ingredients except the apple in a large pan and bring to a simmer on medium-high heat.
Reduce to medium heat and let cook for 10 minutes, stirring occasionally.
Transfer half of mixture to a blender, purée until very smooth and return to pan.
Stir in diced apple and continue to cook until the apple is tender, approximately 6-8 minutes.
Transfer to a container, let cool, cover until needed.
Will keep in the fridge for up to 1 week.
