Nothing could be easier or more comforting after a hard, frazzled day – especially if you serve it with lots of mashed potatoes! Of course, sautéed spinach or steamed broccoli or asparagus is probably more heart healthy.
This unbelievably easy meatloaf is a great dish of comfort food on a stressful day. It works great with chicken or turkey as well. All you do is combine the ingredients and bake while you put your feet up and relax.

ingredients
1 ½
lb(s) ground beef (chicken or turkey works too)
¼
cup Italian/flat leaf parsley, chopped
¼
cup other chopped herbs (oregano, thyme, basil)

Tbsp tangy, spicy mustard (this time I used Kozlik’s Blonde Mustard – made with beer and whole mustard grains)

medium onion, finely chopped
½
cup oatmeal (healthier than breadcrumbs)

egg
1-2
cloves garlic, minced
Salt and pepper to taste

Step 1
Preheat oven to 350°F/180°C.
Step 2
Blend all the ingredients together in a bowl. Form into a loaf and place it in a non stick loaf pan (or spray with a little non-fat cooking spray). Spread a little more mustard on top.
Step 3
Bake for about 45 minutes.
