In large bowl, whisk eggs with oregano, salt and pepper. Stir in cheese, oats, olives, artichokes and green onions. Mix in pork; pat evenly into greased 9- x 5-inch (2 L) loaf pan.
In food processor, blend red peppers with vinegar and honey; spread over loaf. Bake in 350°F (175 °C) oven until meat thermometer registers 170°F (77°C), about 1 hour, 30 minutes. Let stand 10 minutes before slicing.
