boneless, skinless chicken breasts, sliced

red pepper, thinly sliced

onion, thinly sliced

Tbsp (30 mL) Tex-Mex spice blend

cup (250 mL) UNCLE BEN'S® NATURAL SELECT® Spanish Style Rice

cup (500 mL) water
1
cup (250 mL) refried beans
1 ½
cup (375 mL) Tex-Mex cheese blend, shredded
¼
cup (60 mL) green onion, chopped
nacho chips, for serving

Step 1
Heat the oil in a large, nonstick skillet set over medium heat. Add the chicken, red pepper, onion and spice blend. Cook for 5 minutes or until browned.
Step 2
Stir in the UNCLE BEN’S® NATURAL SELECT® Spanish Style Rice until evenly coated. Add the water and bring to a boil. Reduce the heat and simmer for 15 minutes or until the fluid is absorbed.
Step 3
Stir in the refried beans and sprinkle with cheese. Cover and cook until heated through. Sprinkle with green onion and serve with nacho chips.
