Farmers' Market Salad

heads bibb lettuce
¼
cup carrots, peeled and finely sliced
¼
cup asparagus spears, peeled and cut on the bias
¼
cup green beans, cut in half
¼
cup cherry tomatoes, halved
¼
cup cucumber, seeded and sliced
¼
cup summer squash, sliced
¼
cup chives, finely chopped
¼
cup dill, finely chopped
¼
cup parsley, finely chopped

Dijon Shallot Herb Vinaigrette

cup Champagne vinegar

Tbsp shallots, finely diced
1
tsp Dijon mustard
¾
cup canola oil
¼
cup herbs, chopped

pinch salt and pepper to taste

Step 1

Separate the leaves of the Bibb lettuce. Wash lettuce well in cold water and spin dry in a salad spinner. In a medium bowl mix all of the vegetables together. Sprinkle with a pinch of salt and pepper, fresh herbs. Toss with 2 tablespoons of vinaigrette. Arrange the Bibb lettuce leaves on a plate and drizzle with vinaigrette. Top with the dressed vegetables. Add another layer of Bibb and then more vegetables.

Step 2

In small mixing bowl add the vinegar and mustard and whisk together well. Add the oil in a slow stream, whisking until emulsified. Add chopped herbs and season well.
