Farmers' Market Salad
Dijon Shallot Herb Vinaigrette
Separate the leaves of the Bibb lettuce. Wash lettuce well in cold water and spin dry in a salad spinner. In a medium bowl mix all of the vegetables together. Sprinkle with a pinch of salt and pepper, fresh herbs. Toss with 2 tablespoons of vinaigrette. Arrange the Bibb lettuce leaves on a plate and drizzle with vinaigrette. Top with the dressed vegetables. Add another layer of Bibb and then more vegetables.
In small mixing bowl add the vinegar and mustard and whisk together well. Add the oil in a slow stream, whisking until emulsified. Add chopped herbs and season well.
