cup ground blue tortilla chip

Salsa

cup chopped tomato

small sweet yellow pepper, diced

small sweet green pepper, diced

green onion, sliced

cloves garlic, minced

Tbsp chopped fresh coriander

Tbsp chopped fresh parsley

Tbsp lime, juice

tsp hot pepper sauce

Step 1

Preheat oven to 350 degrees F (180 degrees C).

Step 2

Combine ground tortilla chips, flour and butter; pat into bottom of greased 9-inch (2.5 L) springform pan.

Step 3

Center pan on large foil square; press up tightly to side of pan.

Step 4

Bake in oven for 10 minutes.

Step 5

Remove from oven; reduce oven temperature to 325 degrees F (160 degrees C).

Step 6

In large bowl, beat cream cheese until softened; beat in eggs, 1 at a time, beating well after each addition.

Step 7

Beat in lime juice, chili powder, cumin, oregano, salt and hot pepper sauce.

Step 8

Blend in sour cream.

Step 9

Pour onto base.

Step 10

Set pan in larger pan; pour in enough hot water to come 1 inch (2.5 cm) up side.

Step 11

Bake for about 35 minutes or until edge is set but center still jiggles slightly.

Step 12

Quickly run knife around inside of pan.

Step 13

Turn oven off; let cool in oven for 1 hour.

Step 14

Remove from larger pan and remove foil; let cool on rack to room temperature.

Step 15

Cover and refrigerate for at least 8 hours or up to 2 days.

Step 16

Let stand at room temperature for 30 minutes before serving.

Step 17

In bowl, combine tomatoes, sweet peppers, onions, garlic, coriander, lime juice, hot pepper sauce, and salt and pepper to taste.

Step 18

Transfer cheesecake to serving plate.

Step 19

Using slotted spoon, spoon salsa over top.

Step 20

Serve with tortilla chips.
