cup sugar

lb(s) fresh black fig, ends trimmed and quartered

cup brandy, preferably Armagnac

lemon, zest of

lemon, juice of

Step 1

In a medium, heavy bottomed saucepan combine water and sugar. Bring to a boil.

Step 2

Add the remaining ingredients and stir.

Step 3

Cook gently over low heat, uncovered, for 1½ to1¾ hours until mixture is thick and syrupy. Stir occasionally.
