cup (310 mL) all-purpose flour

cup (250 mL) whole wheat flour

Tbsp (15 mL) baking powder
1
tsp (5 mL) baking soda
1
tsp (5 mL) salt
1
egg
¾
cup (175 mL) white granulated sugar
¼
cup (60 mL) melted butter
2
single-serving 100 g containers Oikos 0% Green fig yogurt
½
cup (125 mL) orange juice
1
orange, peeled and cut into pieces
a little softened butter

Step 1

Preheat oven to 350°F (180°C) and butter a 12-cup muffin tin.

Step 2

In a large bowl, mix together the all-purpose flour, whole wheat flour, baking powder, baking soda and salt.

Step 3

In a separate bowl, beat together the egg and sugar with a whisk.

Step 4

Add the melted butter, Greek fig yogurt, orange juice and orange pieces, and mix again.

Step 5

Add the liquid ingredients to the dry ingredients and mix gently with a spatula until just blended.

Step 6

Divide the mixture into the 12-cup muffin tin, filling each cup ¾ full.

Step 7

Place the tin in the 350°F (180°C) preheated oven for 15 minutes, or until a toothpick inserted in the centre of the batter comes out clean.

Step 8

Let muffins sit ten minutes before unmolding.

Step 9

Serve warm!
