This battered fish and salad dish will definitely have your family asking for seconds.

Spinach Salad
directions
Cook rice according to package directions.
Mix dry ingredients, and then add water, vinegar, and egg to make a smooth batter. Mix in dill.
Dip fish in flour, then batter, letting excess batter drip off the fish.
Put enough oil to just coat the bottom of a preheated frying pan.
Add fish and cook until golden brown on each side (approximately 4 to five minutes per side).
Drain fish on a paper towel.
Enjoy with a wedge of fresh lemon, rice and spinach salad.
Set the washed and dried spinach in a salad bowl.
Whisk the juice, 1 teaspoon orange zest, oil, vinegar, honey and mustard together in a small bowl.
Add the chevre and stir until dissolved.
Pour the dressing over the spinach and toss to coat.
Garnish with blackberries and remaining orange zest.
